A recent survey suggests people spend just 8 minutes per night prepping their meals.  EIGHT MINUTES. 

That’s assembling, not cooking.  And while cooking isn’t for everyone, it’s still important to fuel your body with quality nutrition. 

In our house, with two working parents and two young kids, we like things to be simple.  While my wife and I both really enjoy cooking, sometimes Tuesday night also means activities, sports and just playtime.

That’s where convenience comes into play or what we call, One Food, Five Ways.  In today’s blog I show you how we take a simple rotisserie chicken from the grocery store and prepare it five different ways.  Believe me, if we didn’t keep things creative we’d hear from our daughters!

Here are today’s simple recipes:

Chicken Over Pasta (Serves 2)

Ingredients

Chicken from ½ rotisserie chicken (pulled from rotisserie chicken)

½ lb pasta

Handfuls of mixed veggies (clean out your fridge)

Olive oil

Salt and pepper, to taste

Directions

Cook pasta according to directions on box

Meanwhile, remove chicken from the bones

When pasta has about 2 minutes left to cook, add all the veggies to the boiling water
Drain pasta and veggies together, drizzle with about 2 TBS olive oil

Add half the chicken that was removed

Add a pinch or two of salt and black pepper, to taste

 

Chicken Salad (Serves 2)

Ingredients

Chicken from 1/2 rotisserie chicken (pulled from rotisserie chicken)

1 tsp mayonnaise

½ avocado

1 TBSP balsamic vinaigrette

1 stalk celery, chopped

Cracked black pepper, to taste

8 slices sprouted grain bread

Directions

Mix all ingredients (excluding bread) until well combined

Divide evenly among the bread

 

Chicken Over Salad

Ingredients

Chicken from ½ rotisserie chicken

2 large handfuls of your favorite mixed greens

Top with your favorite veggies

2 cups chopped strawberries, apples and/or grapes

Mix in 1 TBS of balsamic vinaigrette

Directions

Serve and enjoy

 

Chicken Fajitas

Ingredients

Chicken from ½ rotisserie chicken

2 bell peppers (red, yellow and/or green)

1 red onion

1 tsp olive oil

Favorite packet of fajita seasoning

Tortillas (if desired)

Directions

Slice onion and bell peppers (or, to make it even more simple, buy pre chopped veggies from the salad bar at your favorite grocery store)

Add olive oil to a medium sauté pan and heat over medium

Add bell peppers and onion, stirring occasionally and cooking until tender (about 5-7 minutes)

Once cooked, add packet of seasoning and follow any specific directions on packet

Top with chicken and enjoy with tortillas (or “naked” if you prefer)

 

Chicken Parmesan (Serves 2)

Ingredients

Chicken from ½ rotisserie chicken

½ cup your favorite marinara (jarred or homemade)

½ cup shredded mozzarella

Side salad (using the salad bar ingredients from the store or made on your own, if you prefer)

Directions

Add a spoonful of sauce to a medium sauté pan

Spread to make a thin layer with a spoon

Turn pan to medium and add pulled chicken on top of the sauce

Top chicken with another spoonful of sauce, cheese and cover

Cook just to melt the cheese and heat chicken through

*Serve with a side salad and pasta if desired
